Monday - Saturday: 11am - 9pm Sunday: CLOSED THE Original PIZZERIA BIANCO Chris Bianco started the first Pizzeria Bianco inside the back corner of a neighborhood grocery store in Arizona in 1988. At the time, he had no clue that he would be such a driving force in the slow food movement, specifically the artisanal pizza front. After moving his pizzeria to a strip mall in 1994 as demand for space grew, he made his final journey to 623 Adams Street in 1997, where Pizzeria Bianco has proudly stood since.

Chris, who won the James Beard Award for Best Chef: Southwest in 2003 and the James Beard Award for Outstanding Restaurateur in 2022 , helped spawn a generation of independent and artisanal pizzeria’s, lending his advice, wisdom and food philosophies to dozens of fellow chefs and restaurateurs. For Chris, the food is a result of his relationships and his intention. Relationships with the farmers, the local producers, his family, customers and staff; and the respect and sincere intentions he approaches his recipes with, as well as the many interpersonal relationships that have influenced his philosophy and who he is. The menu has barely changed since Chris began making his pizzas for the world, with his 6 staple pies still at the forefront of his offerings. These pies include the Wiseguy, Rosa, Sonny Boy, Biancoverde, and the classic Margherita and Marinara. Even though Chris has expanded his restaurants to include multiple Pizzeria Biancos, Pane Bianco, and Tratto , he has been sure to pass along the same passion and integrity for food he began with in the back of a grocery store… As for the pizza – critics, customers and fellow chefs have had their say over the years, including: Chef Nancy Silverton, who founded La Brea Bakery and was a co-founder of Pizzeria Mozza, stated in her book The Mozza Cookbook , “If there was any pizza that I did aspire to, it was a pie made by Chris Bianco, whose Pizzeria Bianco in Phoenix, AZ is a mecca for the pizza obsessed.
