It is SO good and the only recipe you’ll ever need. Our family has been making this for years! It’s healthy and satisfying, and the flavor is out of this world. This easy chicken soup recipe makes me smile just thinking about it! This is our go-to soup whenever it’s chilly or someone in the family is sick. It tastes like it has been cooking for hours, but it hasn’t! It’s way better than the canned stuff, and it’s FAST! The secret is chicken thighs! They make a ridiculously flavorful broth and mean we have homemade chicken noodle soup ready in under 40 minutes (and most of that is hands-off!). We love this easy recipe so much that we made a creamy version, too. Here is our creamy chicken noodle soup recipe . Key Ingredients Chicken Thighs : These are the secret to the best soup! Chicken thighs get super soft and delicious. They have a little fat, add lots of flavor, and stay tender. Chicken breast works, but expect it to be a bit less tender. We also added tips for using roast chicken or rotisserie chicken in the recipe below. (We use rotisserie chicken all the time for our chicken pot pie recipe ). Chicken Stock : We recommend homemade chicken stock or chicken broth , but store-bought works. When you shop for stock, darker broth or bouillon usually means more flavor. We keep the bouillon paste in our fridge. I also love boxed bone broths (or make bone broth ). Egg Noodles : We love them in this soup. They are a little lighter than pasta, but you can always substitute your favorite pasta. Veggies : We keep it simple with onion, celery, carrots, and garlic. The classic mirepoix vegetables for soups like this one. Thyme , Bay leaves, and Parsley : All three herbs are classic flavors for chicken noodle soup. We love fresh thyme, but have offered a substitution in the recipe for dried. Find the full recipe with measurements below. How to Make Our Favorite Chicken Noodle Soup in 40 Minutes For the best flavor, start the vegetables in butter. That’s the mirepoix (onion, carrot, and celery). You are not looking to caramelize them, only soften them so that they turn sweet in the soup. It takes 5 minutes. The butter adds flavor, but you can swap for extra-virgin olive oil or schmaltz (aka rendered chicken fat). When the veggies are soft, add the garlic and herbs. We add garlic after the vegetables are soft. It only needs a minute in the pan before you pour in the broth. Pour in the broth, bring to a simmer, then taste it. Here’s an important step when making chicken noodle soup (or any of our soup recipes for that matter). Once that broth heats up, grab a spoon and taste it to see if you need more salt. Unless you are using well-seasoned broth, you will likely need to add some salt to the pot. Add salt, a pinch at a time, until the broth pops when you taste it. It should make you smile 😊 Also, remember that our chicken thighs will add more chicken flavor. So if you are tasting it and missing some flavor, it’s okay. That comes in the next step. Add the chicken thighs and cook for 20 minutes. Here’s why we love using chicken thighs for soup. They fit in the pot, cook through in about 20 minutes, and release lots of flavor into the broth as they simmer. They are easy to shred, too, which is why we also use them to make our favorite shredded chicken recipe . To keep the noodles from turning to mush, add them last. Remove the chicken and stir in the noodles. Cook them for 6 to 10 minutes right in the soup. They soak up all that incredible chicken flavor. They also release a little starch into the broth, giving the soup a lovely, silky texture. Shred the chicken while the noodles cook. Use two forks to shred the chicken thighs into generous strips. Then set the shredded chicken aside to add to the soup in a few minutes. Bring everything together (you are almost done!) When your noodles are tender, stir the chicken and fresh chopped parsley into the pot. The chicken will reheat. Plus, holding off on adding the parsley until the end means its fresh flavor will permeate the soup. Other herbs are great to add now, too. Dill is a personal favorite when we have it in the kitchen. Don’t forget to taste one last time, then serve. Remember, if the soup doesn’t make you smile, it needs a touch more salt, or a little something extra. A few dashes of fish sauce (our secret weapon) work wonders in this soup. Or brighten things up with a squeeze of lemon juice or a dash of hot sauce. None of these are classic, but they are excellent anyway! Refrigerate chicken noodle soup in an airtight container for up to 4 days. Or freeze for up to 3 months. As the soup sits, the noodles soak up the broth. When you reheat, add a splash of extra broth or water. To make this soup ahead of time, follow the recipe, but do not add the noodles. Refrigerate or freeze the soup. When ready to reheat, bring the soup to a low simmer and add the dried noodles. Cook until tender and enjoy. Chicken Noodle Soup Recipe Variations Creamy Chicken Noodle : Add 2 to 4 tablespoons of heavy cream or half-and-half. We do this in our creamy chicken noodle soup . Add Lemon : Add 3 to 4 lemon slices, as we do for this lemony chicken vegetable soup . Mexican-Inspired Soup : Swap the noodles for Mexican rice and the parsley for cilantro. Add a good squeeze of lime juice, then add chopped tomato, fresh onion, and avocado at the end. You can even add diced corn tortillas as we do for this chicken tortilla soup . Add Umami : Add a teaspoon of toasted sesame oil or a few dashes of fish sauce. We also love adding 1 teaspoon of mushroom powder to the vegetables when adding the garlic. Add More Veggies: Swirl in fresh spinach or kale at the end of cooking for a more vegetable-heavy soup. Substitute the Noodles : Try potatoes, winter squash, rice, quinoa , or grains. Add hearty veggies (like potatoes) to the pot along with the onions and carrots. For rice and grains, add them already cooked. Use Tortellini : Swap the noodles for tortellini or mini ravioli. We love using cheese-filled pasta when making this easy tortellini soup . More Classic Soup Recipes Chicken and Dumplings French Onion Soup Easy Tomato Soup The Best Chicken Noodle Soup You will love this easy homemade chicken noodle soup. It skips cooking a whole chicken and uses boneless, skinless chicken thighs instead. The soup tastes incredible, satisfying, and classic. Plus, the reduced cooking time makes it the best chicken noodle soup for a weeknight. Watch Us Make the Recipe 2 tablespoons (28 g) butter 1 large onion, chopped 2 large carrots, chopped 2 ribs celery, chopped 4 garlic cloves, minced (about 1 heaping tablespoon) 3 fresh thyme sprigs or ½ teaspoon dried thyme 8 cups (1.9 liters) low-sodium chicken stock or homemade chicken stock Fine sea salt and freshly ground black pepper, to taste 1 pound (450 g) boneless, skinless chicken thighs (4 to 5 thighs) 5 ounces (140 g) egg noodles or pasta of choice ¼ cup finely chopped fresh parsley 1 Melt the butter in a large pot over medium heat. Add the onions, carrots, and celery. Cook, stirring occasionally, until the onions are translucent and the vegetables soften, about 5 minutes. Stir in the garlic, bay leaves, and thyme. Cook until fragrant, 30 seconds to 1 minute. 2 Pour in the chicken stock and bring to a gentle simmer. Taste the broth and season with salt and pepper. We usually add 1 to 2 pinches of salt. 3 Nestle the chicken into the pot so the thighs are underneath the broth. Return to a low simmer, then partially cover the pot, leaving a small gap for steam to escape. Cook until the chicken is tender, about 20 minutes. 4 Set a plate nearby. Lift the chicken from the pot and place it on the plate. Stir the noodles into the simmering soup and cook until tender, 6 to 10 minutes. Add a splash of stock if the liquid reduces, and reduce the heat to medium-low. 5 As the noodles cook, shred the chicken into small pieces using two forks. Return the chicken to the pot and taste for seasoning. Stir in the parsley. Divide the soup among bowls and serve. Adam and Joanne's Tips Storing: Refrigerate in an airtight container for up to 4 days. Or freeze for up to 3 months. As the soup sits, the noodles soak up the broth. When you reheat, add a splash of extra broth or water. Make ahead: Follow the recipe above, but do not add the noodles. Refrigerate or freeze the soup. When ready to reheat, bring the soup to a low simmer and add the dried noodles. If you feel the soup is missing some zing, add a bit more salt. Or add a pop of flavor with fresh lemon juice or a dash of fish sauce. Fish sauce sounds odd, but does a great job of making broths taste more seasoned. To use cooked roast chicken or rotisserie chicken, shred 2 to 3 cups and add the chicken along with the noodles. Reduce the simmer time by 5 to 10 minutes. The only thing I did differently, which I do to all of my poultry based soups, is I cube a small sweet potato and add with the veggies. It gives it a little touch of sweetness.
